Mum’s treat – self saucing chocolate pudding for one

Little Chop’s asleep, hubby’s away, Masterchef is on and this Mama’s got a craving for chocolate pudding!

For my single serve choccy pud, you’ll need:

1 large mug

1 1/2 tbs milk

2 tsp butter

1 tbs castor sugar

2 1/2 tbs self raising flour

1/2 tbs cocoa powder

1 tbs brown sugar

2 1/2 tbs boiling water

Place the butter and milk in the mug and microwave for 30 seconds or until butter is mostly melted. Stir in the castor sugar, self raising flour and half the cocoa powder. Sprinkle the remaining cocoa powder and the brown sugar over the top of the batter. Gently pour over the boiling water. Microwave on high for 1 minute, then let stand for 1 minute. Top with thick cream or ice-cream and devour.

*You can add a pinch of nutmeg or cinnamon, or 1/4 tsp of instant coffee if you like to spice things up.

Go on, you know you want one!

  1. I made this for dessert just the other night! My husband is on a no-sugar diet so I had to adapt it and whilst not as more-ish and tasty as the sugar version, it worked!!!
